Creative vegies

Some information about carbohydrates, at last! I grew up on bread and, although it is often used as a staple, it’s great to hear such carbohydrates are overrated. I loved Pete Evans’ piece on low-carb living (issue #170); it included great ideas about how to use vegetables to bulk up food. It's also great to find innovative ways to serve them such as cauliflower rice and zucchini noodles. I rejoiced to see a story that takes an average diet and, with a little imagination and lots of common sense, transforms it for the better.
