• 4 eggs• ½ cup (125g) coconut sugar• 1 tsp vanilla powder or natural vanilla extract• 250mL ghee• 4 carrots, grated• 6 medjool dates, stones removed, flesh finely chopped• 2 cups (250g) gluten-free flour (I use a brown rice and arrowroot combination)• ½ cup (125g) almond meal• 1 tsp baking powder• 1 tsp bicarbonate of soda• 2 tsp ground cinnamon• 1 tsp ground cardamom• 120g roasted hazelnuts, chopped
