Apple & Rhubarb Overnight Oats

Serves: 2–3

Overnight Oats

½ cup milk or water + extra for serving
½ cup Table of Plenty Mixed Berry Kefir
1 cup rolled oats
1 tsp honey (optional)

Rhubarb Filling

1½ cups diced rhubarb
2 tbsp caster sugar
1½ tbsp orange juice

Apple Filling

1 tbsp butter1 Granny Smith apple, peeled, cored & chopped into 1cm cubes2 tbsp caster sugar1 tbsp water½ tsp ground cinnamon1 tsp cornstarch
