Lentil burgers

Pulses such as lentils are a great source of protein, and with the addition of cheese and spices, you won’t miss the meat in these patties.

Makes four portions

375ml (1½ cups) uncooked lentils875ml (3½ cups) water375ml (1½ cups) freshwhite breadcrumbs1 round of feta, crumbled250ml (1 cup) mozzarella, grated5ml (1 tsp) ground coriander10ml (2 tsp) fresh parsley, choppedPinch of cuminPinch of cinnamon1 onion, chopped fine1 carrot, finely grated2,5ml (½ tsp) saltBlack pepper to taste2 eggs, beatenOil for frying
