IN SEASON FRUIT BLUEBERRIES

Blueberry Bakewell Cake

PREP + COOK TIME 1 HOUR SERVES 8-10

 140g ground almonds
 140g butter, soft
 140g raw or golden caster sugar
 140g self-raising flour
 2 eggs
 1 teaspoon vanilla essence
 220g blueberries
 ⅓ cup flaked almonds
 icing sugar, to serve

1 Preheat oven to 170°C. Grease a deep 20cm loose-bottom cake tin and line the base. With a mixer or processer, beat the ground almonds, butter, sugar, flour, eggs and vanilla until well combined.
