Eggplant & Lamb Biriyani with Cashews
PREP + COOK TIME 40 MINUTES SERVES 6
• 1 tablespoon vegetable oil
• 1 teaspoon yellow mustard seeds
• 1 teaspoon cumin seeds
• 1 onion, chopped
• 1 eggplant, cut into 15mm cubes
• 500g lamb mince
• ½ cup tikka curry paste
• 1 tablespoon natural yoghurt, plus extra, to serve
• ½ teaspoon salt
• large pinch of dried chilli flakes
• 1½ cups basmati rice
• 2 cups beef stock
• ⅓ cup sultanas, roasted cashews and coriander, to serve (optional)
