SWEET tidings

MINI BROWNIE PUDDINGS

PREP + COOK TIME 1 hour + cooling + chilling MAKES 50

 125g butter, chopped
 400g dark chocolate, chopped
 ⅔ cup caster sugar
 2 eggs, lightly beaten
 1¼ cups plain flour, sifted
 ⅓ cup dark rum
 60g white chocolate, melted
 glacé cherries, to decorate

1 Preheat oven to 170°C. Grease a deep 20cm square cake pan. Line base and sides with baking paper.

2 Stir butter and half the dark chocolate in a saucepan over low heat until smooth. Transfer to a bowl. Cool for 10 minutes.

3 Stir in sugar, eggs and flour. Spread mixture into pan; bake for 30 minutes. Cool in pan.

4 Cut brownie into pieces and process with rum until mixture comes together. Roll heaped teaspoons of mixture into balls. Freeze for 10 minutes.

Melt the remaining dark chocolate and use it to coat the balls; chill until set. Decorate
