Cook up A GIFT

CINNAMON SUGAR MIXED NUTS

PREP + COOK TIME 40 mins MAKES 4 cups

 1 egg white
 1 tablespoon water
 1 tablespoon spiced rum
 4 cups mixed raw nuts
 1/2 cup white sugar
 1/2 cup brown sugar
 2 cinnamon sticks
 1 tablespoon ground cinnamon
 1 teaspoon salt
 1/4 teaspoon cayenne pepper, approx

1 Preheat oven to 150°C. Line two oven trays with baking paper.

2 Whisk egg white and water together for about 2 minutes until frothy and foamy. Stir in rum. Pour mixture over nuts.

3 Add sugars, cinnamon sticks, ground cinnamon, salt and cayenne. Toss well to coat nuts evenly.
