Bliss balls

apple and pepita

Makes 35 Takes 20 mins + refrigeration

250ml raw sliced almonds
200g pitted medjool dates, chopped
50g dried apple, coarsely chopped
310ml desiccated coconut
125ml pumpkin seeds about 10ml hot water

1 Process almonds until finely chopped. Add dates, dried apple, 60ml of the coconut and pumpkin seeds. Process until well combined. Add the water and process until the mixture comes together.

2 With damp hands, roll 10ml of mixture into balls. Roll balls in remaining coconut to coat. Place on an oven tray lined with baking paper. Refrigerate for 1 hour.

Combine 750ml bran-rich self-raising wheat flour, 180ml mixed seeds, 15ml sugar and 5ml salt. Stir in 580ml sparkling water until just combined. Spoon into an 11cm x 22cm loaf tin lined with baking paper. Sprinkle with extra mixed seeds, if you like.
