VANILLA MACERATED STRAWBERRIES

Makes about 3 cups

The classic fruit complement to Angel Food Cake. What more could you want?

3 cups (441 grams) hulled and sliced fresh strawberries
2 tablespoons (24 grams) granulated sugar
2 teaspoons (12 grams) vanilla bean paste
1 teaspoon (4 grams) vanilla extract

1. In a medium bowl, toss together all ingredients. Let stand, stirring occasionally, until sugar is dissolved and a syrup is created, about 20 minutes.
