Orange–Poppy Seed Gluten-free Scones

Makes 12

2 cups gluten-free all-purpose flour*
¼ cup granulated sugar
2 tablespoons orange zest
1 tablespoon baking powder
1½ teaspoons poppy seeds
½ teaspoon salt
5 tablespoons cold unsalted butter, cubed
¾ cup heavy whipping cream
¼ cup fresh orange juice
1 large egg
1 tablespoon water
Orange Glaze (recipe follows)

• Preheat oven to 425°. Line a rimmed baking sheet with parchment paper.

• In a large bowl, whisk together flour, sugar, orange zest, baking powder, poppy seeds, and salt. Using a pastry blender or 2 forks, cut in cold butter until it resembles coarse crumbs. Add cream and orange juice, stirring until combined.

• Turn out dough onto a lightly floured surface, and knead just until dough comes together. Using a rolling pin, roll out dough to a ¾-inch thickness. Using a 2¼-inch fluted square cutter, cut 12 scones from dough, rerolling scraps as necessary. Place scones on prepared baking sheet.
