Spicy Chicken Satay Noodle Salad

250g packet pad Thai noodles
2 x 250g chicken breast fillets, trimmed
½ small pineapple (700g), peeled, quartered, cored
2 Lebanese cucumbers, trimmed, halved lengthways, sliced
100g mixed salad leaves, washed
1 cup flaked coconut, toasted
1 cup firmly packed fresh coriander leaves
½ cup firmly packed fresh mint leaves

¹/ ³ cup coconut milk¼ cup yellow curry paste¼ cup crunchy peanut butter¼ cup2 tblsps fish sauce
