Broccoli and cauliflower soup

What better way to warm up cold nights than by serving hot, cheesy soup? For a stronger flavour, replace the feta with Stilton.

Serves four

A small quantity of butter3 leeks, sliced2 potatoes, peeled and cut into small cubes1ml dried parsley1 litre2 chicken stock cubes1 head of cauliflower, broken into small pieces1 head of broccoli, broken into small pieces125ml (½ cup) Cheddar, gratedSalt and pepper1 circle of feta, crumbed
