GORGE-OUS AUGUST!

BLACKCURRANT VINAIGRETTE

Berry vinaigrette adds a lovely element to salads, and by using vitamin C-rich blackcurrants, you’ll be getting your RDA in no time!

MAKES 1 BOTTLE

Preparation time: 10 minutes

■ 2 cups fresh blackcurrants
■ ½ cup apple cider vinegar
■ ½ cup sugar
■ ½ tsp mustard
■ 1 tsp salt
■ ½ tsp ground black pepper
■ 2 cloves garlic
■ 1 cup sunflower or light olive oil

1. Place the blackcurrants in a blender with the apple cider vinegar and whiz on high until puréed.
