BRUSSELS SPROUTS WITH CREAM & ALMONDS
SERVES 4 PREPARATION: 10 MIN COOKING: 10 MIN
1kg Brussels sprouts, halved
250ml (1c) pouring cream
2 garlic cloves, crushed
salt and freshly ground pepper
50g almond flakes, roasted
1 Boil or steam the Brussels sprouts until tender then drain.
2 Place the cream and garlic in a saucepan and simmer until reduced by half. Season with salt and pepper.
3 Serve the Brussels sprouts drizzled with the cream mixture and sprinkle with almond flakes.
TIP
Shredded cabbage can also be used instead of the Brussels sprouts – stir fry the cabbage in a bit of oil before drizzling with the sauce.
