500ml (16fl oz) skimmed milk
1 bay leaf
Grating of fresh nutmeg
350g (12oz) skinless, boneless salmon fillet
60g (2oz) butter
30g (1oz) plain flour
100ml (3½fl oz) white wine
1tbsp parsley, chopped
Finely grated zest of ½ lemon
250g (9oz) cooked, peeled prawns
