Celebration stu ffing
SERVES 16 (suitable for freezing) READY IN 15 mins
INGREDIENTS • 2tbsp olive oil • 2 onions, finely chopped • 4 garlic cloves, crushed • 150g fresh white breadcrumbs • 150g pecan nuts, finely chopped • 150g dried cranberries, finely chopped • Finely grated zest and juice of 1 orange • 4tbsp each chopped parsley and chopped sage • 2tbsp brandy or lemon juice • 2 eggs, lightly beaten
1 Heat the oil in a pan, then fry the onion and garlic for 10 mins to soften, but not brown.
2 Tip into a bowl with all the remaining ingredients. Season and mix thoroughly.
3 Roll into balls or use to make the wreath, the en croute or to stuff the turkey.
Madeira turkey gravy
SERVES 8; suitable for freezing READY IN 15 mins
INGREDIENTS • Turkey roasting juices • 4tbsp fat from the roasting tin • 2tbsp plain flour • 100ml Madeira • 1 Knorr Chicken Stock Pot • 1tsp Dijon mustard • 1tbsp redcurrant jelly
