Beetroot and feta muffins
These savoury muffins are packed with seeds and beetroot, perfect for a quick and nutritious snack.
MAKES 12 MUFFINS
• 100g unsalted butter• 200g raw beetroot, peeled and finely grated• 1 tbsp honey• 1 tbsp plain live yoghurt• 100g all-purpose flour• 100g wholemeal flour• 1 tsp chilli powder• 1 tsp cumin seeds• ½ tsp bicarbonate soda• 2 tsp baking powder• 2 large organic eggs• 75g roughly chopped walnuts• 50g rolled oats• 50g pumpkin seeds• 100g feta, crumbled• Sea salt and black pepper
