Barbecue Short Ribs
SERVES 4, PREP AND COOK: 20 MINUTES + 4 HOURS/OVERNIGHT MARINATING
INGREDIENTS
1 bunch of spring (green) onions, half roughly chopped, half finely sliced
1 small Asian pear, peeled, cored and roughly chopped
3 garlic cloves
1 tbsp grated ginger
125ml (½ cup) soy sauce
60ml (¼ cup) rice vinegar
40g light brown sugar
3 tbsp toasted sesame oil
150g kimchi radish, finely sliced, plus 3 tbsp liquid
1.4kg Korean-style short ribs (5-10mm thick)
Sea salt flakes and freshly ground black pepper
