Am I missing something?

Thank you for the recent in-depth on the new Sony A7R IV (AP 3 October). As I primarily shoot nature photography and am looking at the possibility of upgrading to mirrorless, I was interested to read that the ‘wildlife photographer can benefit from the 26.2MP APS-C crop mode to add extra reach to lenses’. My question is this: Could I not take a photograph using the 61MP full-frame setting and just crop the photo later in Lightroom? Surely the end result would be the same, or am I missing something obvious?
