    Fresh herbs are great when cooking healthier, as they add a kick that will wake up your palate, and turn your cooking in a whole new direction.

    Broths are great alternatives to add a little flavor to a meal, mashed potatoes are a perfect example: instead of heavy gravy or lots of butter, try cooking with chicken broth, the same goes for rice.

    W e will take some classics and put my spin on them, to create something up- to- date and delicious.

    We will create some of the most deliciously decadent desserts, some kid-friendly meals, and some that need to be eaten behind closed doors.

    As you take this journey with me we are going to do our best to eat as healthy as possible. You will notice a lot of chicken & turkey recipes, these recipes work well with beef or pork too, if you so choose.

    I like to satisfy everyone’s palate, when I cook. I also like a challenge, so I will from time to time cook a meal and serve it as if it was the original, but instead I’ve substituted beef for turkey, or chicken for pork. After the meal is over and everyone is full I will ask for feedback. Then and only then do I tell them my secret.

    o w! I hear a lot of people say I can’t cook, or I can’t boil an egg, or my favorite is I can burn water. So now you’ve convinced yourself that you can’t cook!

    Well that’s not true.

    Start with some fresh vegetables, fruits, and a great cut of meat. Use your imagination and even you will be cooking in no time.

    Still nervous? It’s okay. This can be terrifying to someone who is a cooking virgin. But cooking is fun and very rewarding. Come on let me show you!

    Chapter 1-Soups

    Every Thang Potato Soup!

    1-28oz can of diced potatoes

    1 container of V8 Garden Broccoli Soup

    1/2 bag of Seasoning Blend (onion, celery mixture in the frozen vegetable section)

    1 envelope of Lipton Vegetable Soup Mix

    2 tablespoons of butter

    1 tablespoon of minced garlic

    A handful of frozen spinach

    pepper to taste

    Ms. Dash table blend to taste

    1/4 jar of Alfredo Sauce or to your taste

    Directions:

    In a large saucepan add the butter, seasoning blend, and vegetable soup mix. Cook over low heat until the vegetables are tender, stir constantly to prevent sticking.

    Add in the spinach, garlic, pepper and Ms. Dash.

    Stir until spinach is thawed.

    Now stir in the potatoes, and let simmer until the potatoes are warmed through, then pour in the garden soup.

    Remember to stir often.

    After everything is incorporated add the Alfredo sauce to taste, or to the consistency you like.

    Serve with diced chicken or grill cheese.

    Cabbage Soup!

    1 head of cabbage

    1 medium size shallot

    1/2 a green pepper

    1/2 a red pepper

    1/2 a orange or yellow pepper

    1 packet of Salad Jazz shallot pepper

    2 tablespoons parsley

    1 bunch of green onions

    1 large red onion

    1 1/2 cartons of low sodium chicken broth

    1 pack of Knorr’s dry vegetable soup mix

    1 small can mushrooms

    1 can of diced potatoes

    1/3 can of diced tomatoes

    salt & pepper

    Ms Dash

    EVOO- extra virgin olive oil

    butter

    Directions:

    Cover just the bottom of a dutch oven with EVOO and a tablespoon of butter, and heat over a medium flame. Once the butter melts add the red onions, shallot pepper, and green onions, cook until the onions are tender.

    Slice your all your peppers into thin strips and add to the onions, along with the mushrooms, parsley, salt, pepper, and Ms Dash to taste.

    Feel free to add more butter to prevent sticking.

    Cover and let simmer so all the flavors can marry,

    Upon checking the mixture if you need more moisture add chicken broth, but do not drown the mixture in it, just add enough to keep a liquid present in the pot.

    The mushrooms will soak up the liquid fast so keep an eye on it, and add broth as needed.

    Chop up your head of cabbage into the slices you desire, and once all the vegetables in you onion mixture are tender add the cabbage to it, along with 1 carton of chicken broth.

    Stir the mixture to bring the tender veggies to the top and cover.

    Cook over medium heat until the cabbage begins to get tender, and then add your potatoes and tomatoes turn the heat down to low and cook for 10 more minutes.

    Feel free to add salt, pepper, and Ms Dash to taste.

    Savory Corn Soup!

    1 large onion diced

    1 pack Knorr’s vegetable soup mix

    2 tablespoons parsley flakes

    2 tablespoons shallot pepper

    1 teaspoon onion powder

    1 teaspoon garlic powder

    2 teaspoons of Ms. Dash

    1 tablespoon minced garlic

    2 pieces of Secres sweet marinated red pepper diced

    1 15oz can corn drained

    1 15oz can diced potatoes drained

    1 box of V8 southwestern corn soup

    1 container of chicken broth low sodium

    butter

    salt & pepper to taste

    EVOO- just a drizzle to prevent sticking

    Directions:

    In a dutch oven combine the EVOO & butter, onions, soup mix and parsley flakes. Cook until the onions start to soften, then add the shallot pepper, onion powder, garlic powder and garlic. Cook for about 2-3 minutes, just enough to incorporate everything. Add more butter if you need to, in order to prevent sticking.

    Now add the Ms Dash, diced red peppers and corn. Continue to simmer until the corn is warm up, and then add 1 ½ cups the chicken broth, stir to incorporate and let simmer for 5 more minutes to give the herbs a chance to rehydrate and soften.

    Add the V8 soup and stir to incorporate, and then add the potatoes, salt & pepper. Let the soup simmer for a few minutes to give all the ingredients the chance to pick up each other’s flavor.

    Taste and re-season if necessary.

    This recipe can be doubled or tripled for any occasion.

    Chapter 2-Chicken & Turkey

    Chicken Parmesan w/Orzo Pasta!

    1 pack of breaded chicken patties (6-8)

    House seasoning

    6-8 slices of fresh mozzarella

    1 jar of your favorite spaghetti sauce

    ½ lb of orzo pasta (about ½ a box)

    1 tablespoon fresh parsley

    1 tablespoon fresh oregano

    1 tablespoon shallot pepper

    salt & pepper to taste

    Directions:

    Heat the oven to 350.
