    Lemon sugar pancakes

    Ingredients

    1 & ½ cup flour

    ¼ tsp of baking powder

    1 tbsp of caster sugar

    2 tbsp of butter (melted)

    1 egg (large)

    1 tsp of vanilla extract

    1 & ½ cups of full cream milk

    2 tbsp of lemon juice

    2 tbsp of caster sugar

    Directions

    Mix flour, bicarbonate soda and caster sugar in a large mixing bowl. Add butter, egg, vanilla extract to bowl and mix. Pour and whisk milk gradually into mixture until you have a smooth mixture. Let the mixture stand for 1 minute before cooking.

    Cooking method

    Heat non-stick fry pan on medium to high heat, with a teaspoon of butter or cooking oil until warm. Add pancake mixture and cook until you see small bubbles float to the surface of uncooked pancake. Generally the pancake should be 8 to 10 inches in diameter. Flip pancake carefully. Cook until golden brown.

    To serve, lightly pour lemon juice to cooked pancake and sprinkle sugar over top to taste.

    Pear & walnut pancakes

    Ingredients

    1 cup of flour

    ¼ tsp of baking powder

    1 tbsp of caster sugar

    2 tbsp of butter (melted)

    1 egg (large)

    1 cup of full cream milk

    2 small pears sliced thinly

    1/3 cup of crushed walnuts

    Directions

    Combine flour, bicarbonate soda and caster sugar in a large bowl. Add melted butter, egg and milk. Mix until a smooth consistency. Add walnuts and mix
