Chapter A - My Break-up Story
I was not always a gluten-single gal. In fact, for much of my life, wheat, refined carbohydrates, and their other gluten-filled buddies were my date of choice. I could find a way to justify spending time with them or work them into my day as often as possible. If I could sandwich something between bread (or put it on top of bread or near bread or just eat bread on its own), I did. Pasta was its own food group. No meal was complete without a side of refined carbohydrate. Crackers? My go-to. Muffins? Cookies? Pastry? Gluten and I were happy as could be, frolicking our way from Subway sandwich to box of Wheat Thins and back, and things were good.
Or so I thought.
When I was 18, I had the first big health scare of my life. Suddenly, my 40 extra pounds had caught up to me and my organs were not happy. Although I thought I’d been eating fairly healthfully (albeit, definitely in all the wrong amounts), a big part of my food relationship was causing some serious damage.
After a doctor at the hospital suggested I try an elimination diet to see what could be at the root of my digestive issues (not to mention lack of energy, weight retention, strange rashes, and moodiness), I discovered that I was incredibly sensitive to gluten and in fact, it was the culprit behind many of my issues.
