Wendy studied at Reading University, before moving to Macmillan Education then Oxford University Press and Purnell Books. When licensed character publishing was in its infancy, she worked on accounts such as Walt Disney, Dangermouse- Subsequently she had some of her own children's stories published: some licensed character material, others in anthologies and four books about Bertie Bassett. Two particular areas of expertise are the apparently odd pairing of mind, body, spirit and cookery. In cookery, she has worked with many major UK and international publishers such as BBC Books, Simon & Schuster and Cassell and can name drop Ken Hom, Gary Rhodes, Madhur Jaffrey, Mary Berry and Valentina Harris among the authors whose books she has edited. As well as the children's books, her writing credits include Simply Feng Shui, Silver Surfers' Colour Guide to Word Processing, Classic 1000 Recipes, Classic 1000 Cake and Bake Recipes, First Years, Starting School, Ladies' Flower Garden and The Kitchen Companion.She has a grown-up son and daughter and lives in Berkshire, currently with two cats.

Introduction
For one modest cookbook to try to encompass all of American cooking would be an impossible task. There is such huge scope and variety across the States that you would need a whole library of books to begin to do the subject justice. And even then, you would find that some people would bring other favorite dishes to the table, offering them up for inclusion.
So all we can do here is offer a little peek at some of the most popular dishes across the States, to offer a snapshot of just how interesting and exciting American cooking can be. From the spicy fish dishes of the Deep South to the creamy chowders of New England; from the lightest angel cakes to robust pumpkin pies – here is just a selection to whet your appetite. The only certainty is that everyone will feel there is at least one more essential recipe that has been overlooked!
It would be impossible to define a cuisine that is so broad-ranging. Not only are the climate and the crops so different across the country, so is the weather and the lifestyle. The style of cooking is unlikely to be the same in the Californian sun as it is in the snows of Michigan, or in New York City compared with the plains of Texas. Add to that the influence of both European and other styles brought in and maintained by people migrating to America and you bring yet another dimension. Italians, Poles, Spaniards, Puerto Ricans, and so many others have all brought their ideas, techniques, and styles to broaden and enrich the culinary culture.
So is there anything that these dishes share in common? One thing that marks them out as quintessentially American? Perhaps not in style or flavor, but in essence, yes. For they all begin with the best local ingredients, cooked to enhance their flavors and complement their textures, and to serve for the enjoyment of family and friends.
