We do everything but forget to take care of our body. Then if we have a medical problem, we are surprised. It is time to wake up and take responsibility for our life.
Our body needs energy, minerals, amino acids and vitamins. In other words macro and micro nutrients. We need energy but what we really need is clean energy.
We make choices every day, like we save money on food, then we spend it on cigarettes and canned sodas or on alcohol. We make the choices, then we look for excuses. At least some of us do it or did it.
With this book we want to give ideas for people who decide to give up on excuses and take responsibility, or those whom already live a healthy life, just looking for new ideas. New ideas which can save time and money. If you think you recognize yourself among these two groups above, than you are reading the right book.
We would like to let you know that a portion of the author`s proceeds go to charity. We are waiting for ideas, where the charity is most needed.

I`m a Hungarian born professional chef and nutritionist. For the last 17 years I was traveling around the world. I have worked as a chef in some of the best restaurants, cruise liners, private yachts and villas. Cooking for me is not only a profession but my passion and hobby as well. Like many other chefs who are passionate about food, at early age I started to gain weight. I was not happy about it, so started to change the way I eat and the way I cook. I realized more and more people adapting to a healthier lifestyle and many more would like to change. During the years I collected and created many healthy food recipes, most of them are simple to prepare. I would like to share my knowledge, hoping it will help many people in our "high speed" world.

Prologue

We would like to share with our recipes, cooking and healthy eating ideas with many people in the hope, that we help with the many food-lovers of the world. It`s often difficult today to strike a balance in our diets. We want to show people, that we can live on the edge in our high speed world without compromise when it comes to food.

As a private chef and nutritionist we work on easy to cook, healthy meals made from fresh ingredients, which are available for most people.

First we started to share our ideas on Facebook (M&M Chef), then we decided to write a book from them, and this is the result.

Anyway, since that first decision, we realized that writing and creating a cook book is hard work but also lots of fun. So we`re going to keep working on new ideas, and go into greater detail into our healthy diets in our next books, but until then, enjoy the cooking from this selection of recipes, and please give us some feedback! We would love to hear from you about your cooking experiences from this book.

BREAKFAST

Apple and cinnamon oaty pancakes

Ingredients for 4 person:

- 5 apples

- 2 eggs

- 160 g (0,35 lb or 5.6 oz) oat flour

- 2 tbsp natural yoghurt - per person

- 1 tsp cinnamon

- 1 tbsp coconut oil or peanut oil

Optional:

We always use these ingredients. They are excellent sources of important nutrients.

- 1 tsp grounded chia - per person

- 1/2 tsp acai berry - per person

- 1 tsp grounded flaxseed - per person

To serve you can use organic marmalade or honey. We usually add 1 tbsp/ person Lepicol - Psylium Husks.

Preparation time: 15 minutes

Difficulty level: easy

Method:

Peel and grate 4 apples, then gently press them out. Mix the eggs in the juice.

Then work the dry ingredients (except the Lepicol) and the grated apple into a thick batter.

Heat a little bit of coconut oil or peanut oil in a non-stick frying pan over medium heat.

Add 3-4 tbsp of batter (depending on the size of your frying pan). With your spoon, flatten and arrange them nicely. Cook them until both sides are golden brown.

Serve them with some fresh sliced apple and natural yoghurt. You can decorate with other fruits as well.

We like it with honey and organic marmalade, with Lepicol sprinkled on the top.

Breakfast muffins

Ingredients for 6 muffins:

- 50 g (0.1 lb or 1.7 oz) oat flour

- 30 g (0.06 lb or 1 oz) oatmeal

- 2 tbsp natural yoghurt

- 1 tsp baking powder

- 1 apple

- 1 egg

- 1 tsp cinnamon

- 1 tsp grounded flaxseed (optional)

- 1 tsp chia seeds (optional)

Preparation time: 30 minutes

Difficulty level: easy

Method:

Heat up the oven to 180°C (350°F).

Separate the egg. Add the grated apple to the egg yolk and press it a little bit with your hand, so the juice comes out into the bowl. Then add the rest of the ingredients and mix well.

Beat the egg white until it forms peaks. Fold it carefully into the batter.

Either use paper muffin cups or grease a muffin tray.

Fill the forms almost full - this muffin will not rise too much. Bake it in the oven for 15 minutes.

You can serve them immediately.

Porridge with banana, apple and blueberry

Ingredients for 4 persons:

- 120 g (0.26 lb or 4.2 oz) rolled oats

- 500 ml milk, soya milk, almond milk or water

- 250 g (0.5 lb or 8.8 oz) Greek natural yoghurt

- 1 pinch of salt

- 1 banana

- 1
