    I. Introduction

    Whisky, also spelled whiskey (depending on the country of origin), is a type of alcohol made from grain mash that has been fermented. Grains such as barley, wheat, rye, and corn are used to create different types of whisky. The alcohol is then aged in wooden casks traditionally made from white oak. Whisky is produced in many countries around the world and its taste, as well as alcohol content, changes in relation to the techniques used for distillation, aging, and the type of grains used.

    It is believed that the technique used for distillation originated in Mesopotamia during the 2nd millennium BC. Distillation was used at the time to create perfumes. Distillation was used by other cultures, including the Greeks, during the 1st century AD and the Arabs during the Middle Ages. The earliest known instance of distillation used to make alcohol dates back to the 13th century. Italian monasteries would use this technique to create wine. The first record of distillation being used to make grain alcohol dates back to 1405 in Ireland. The first instance of Scotch, or whisky manufactured in Scotland, dates back to 1494.

    Distillation has been improved and perfected over the centuries. Whisky and Scotch used to be very potent beverages. These drinks became a lot smoother as dilution became a more common practice. In 1823, the UK government passed the Excise Act which legalized the production of moonshine. The popularity of homemade whisky grew throughout the 20th century and eventually spread to the United States during the 1920s due to the sale of alcohol being banned under the Prohibition.

    Making your own whisky or Scotch is relatively simple, but you need to exercise caution. There are some legal regulations regarding producing moonshine and you need to make sure that distilling your own moonshine is allowed in the area where you live. You also need to follow a few basic guidelines to prevent accidents and to avoid producing a beverage that could be hazardous to your health.
