My journey into cake-making began when at the tender age of about 8 years I made my first cake all by myself. Proudly I gave my father the first piece. You can imagine my horror when he ran to the sink and spat it out! It wasn’t until I tried a piece that I understood why - I had used a cup of salt instead a cup of sugar!
Then when my son was about 7 years old he announced that he did NOT want me to make his birthday cake and that it had to be a store-bought cake. He was ashamed of my cakes. It was then that I had to finally admit to myself that I sucked at making cakes.
A few decades on I decided to adopt a raw vegan diet. It was then that I discovered how incredibly delicious raw cakes can be. Imagine that - a cake that is not cooked - no dairy, sugar, flour, eggs? It’s different all right. But outrageously good. At last, everybody could love my cakes. People now clamour for my cakes! And the beauty is they are dairy-free, sugar-free and gluten-free. They tick all the boxes. They taste absolutely amazing and just happen to be healthier for you.
My other recipe book ‘The Essential Oil Cookbook’ (which morphed into ‘Weigh Less Eat Like Royalty’) shows that a few drops of top-quality essential oil could transform just about any dish into one fit for the Gods. And so it was with raw cakes, adding a few drops of essential oils did work magic.
As an environmental and animal rights activist the raw vegan diet has become a fun way for me to encourage people to shift their dietary choices away from meat, dairy, eggs and fish. There are so many reasons to do this - to protect the environment, one’s health, to reduce animal suffering and to stop world hunger.
By adopting a vegan diet you save 1100 gallons of water, 30 sq. feet of forest, 45lbs grain and one animal’s life every single day. Animals suffer so much - imagine the horrific emotional pain of having your calf stolen from you just hours after giving birth, not just for the mother but the baby as well. Not drinking milk saves water - it takes up to 1000 gallons of water to produce 1 gallon of milk and 2,500 gallons water to make 1lb beef. Animal agriculture is the main cause of every environmental ill known to man and the largest contributor to deforestation, pollution, dwindling resources, ocean dead zones, habitat destruction, species extinctions, water scarcity, land shortages and world hunger. One third of the planet is becoming desert due to livestock grazing. Raising animals for food is really what is killing the planet. Therefore the solution is a plant-based diet, the only sustainable way to go for 7+ billion people.
By eating raw food you preserve the heat-sensitive vitamins, all the enzymes and about half the protein. It means you can eat less, your digestion often improves, your energy levels and health improve, excess weight falls away, depression disappears. What a perfect win-win situation!
Please always use top quality ingredients - organic where possible, even if it costs more. You are worth it. Besides by purchasing non-organic food you are supporting the pesticide industry poisoning the planet. The planet is worth it. Use the best quality essential oils in these recipes i.e. not the cheapest ones.
