    Why a Breakfast Cookbook?

    We live in a busy society, but one thing that hasn’t changed is our body. In order for us to perform well at work and school, we need the appropriate fuel. Studies show that people who eat breakfast weigh less than people who don’t. One reason for this may be that breaking fast after a long period of sleep tells the metabolism to get up and running. If you’re watching your weight, don’t skip breakfast. Just eat a smaller portion, skipping the bread and adding more vegetables and fruit. Combine a little protein such as a hard-boiled egg with a bit of fruit, or enjoy one of the lighter recipes that follow.

    Someone who skips breakfast ends up famished by 10 A.M. and may make up for the lack of proper nourishment by heading for the donuts or other sugary junk. And by the end of the day, the up and down cycle of blood sugar rising and crashing causes them to eat more total calories. Not to mention the stress and emotional havoc this can bring in the form of mood swings.

    Breakfast is especially important for children.

    But since we are typically so busy in the mornings, who wants to spend a lot of time in the kitchen? In many families, the adults have to get up and get ready for work early in the morning while also wrangling the kids out the door for school. Getting everyone dressed, washed, fed, the appropriate paperwork and homework in the right backpack, lunches packed and handed over...I’m stressed just typing it!

    In my house, I rarely have to go anywhere in the mornings. I work from home and six of my kids are homeschooled. (And the one that attends public school is self-sufficient.) Even still, mornings are busy for us. My husband and I run a business from home. I get up hours before the kids do to work and write, and our kids start their schoolwork and chores just after breakfast. I don’t prefer to spend a lot of time over a hot stove in the morning either, especially since I’ll be cooking lunch and dinner that day as well. I prefer for my mornings to be
