Weight Loss Stir-Frying - Tina Porter
Foreword
Oh Lord please don't burn us don't kill or toast your flock. Don't put us on the barbecue or simmer us in stock, Don't bake or baste or boil us or stir-fry us in a wok
– Monty Python
I remember fondly the first time I made a stir-fry meal. I had just purchased a new wok and had to try it out. I made a chicken marinade with vegetables that I chose. I have some allergies to be concerned about, so I had to make some substitutions. Regardless of my inexperience making stir-fry and my substitutions, my family and I thoroughly enjoyed the flavor of my delicious chicken stir fry meal.
If you don’t have a wok or a cast-iron skillet, have no fear. You can still make any of these meals in a large flat frying pan. As with any recipe, substitute butter for oil if you prefer, just make sure you keep an eye on it because butter burns quickly.
These recipes are low-carb but there are even more ways to cut back on carbs by omitting some ingredients and inserting others that are more of your preference. Any recipe can be made your own. The only thing you need to do when substituting is to make sure you’re keeping the portions and sizes about the same.
This book is littered with tips and tricks to making your recipes healthy and delicious. Keep in mind that you should never completely eliminate carbohydrates from your diet. Some carbs are necessary to maintain a healthy diet.

I like to abide by the seasons and let the natural flavor in food speak for itself. I use quick cooking techniques of high heat with very little fat, such as quick sauté or wok stir-frying.
– Cat Cora
In this chapter, I will help you to:
Choose great meats for your stir-fried meals.
Choose the right vegetables and substitutions for your meals.
Basics about Stir Frying
There are some ingredients that are easier to use when stir-frying than others. For instance, thin slices of steak are better than a ground hamburger for many of the beef meals. Pork and shrimp are mainstays for much of the traditional stir-fry recipes.
You will need oil to stir fry. You can use whatever oil you are most comfortable with but coconut oil is one of the healthiest. The same can be said about peanut oil. If you don’t want to use either of these for whatever reason, there is still vegetable, canola or olive oil.
One of the most common ingredients for stir-fry recipes is garlic. It is aromatic and is usually minced for these types of meals.
Pick the freshest vegetables you can. Few recipes will call for frozen vegetables but if you can get by
