Sauerkraut In A Mason Jar, is a perfect addition to preparing fermented food in the kitchen. You don't need to have a crock and do not have to make huge, time consuming, batches of sauerkraut that are hard to store. Also you can make fresh sauerkraut with all the enzymes present, unlike canned sauerkraut which has been heated. Once made sauerkraut stores well in the refrigerator, and the mason jars take up very little space.

The following recipe will make enough for two wide mouth Mason quart jars. Time Required: approx 3-1/2 hours (includes 10 min. break and clean up).
Equipment Required
Two wide mouth Mason Jars (canning jars) one quart size.
Two glass or ceramic weights.
Option: a canning funnel for ease of filling jars.
One large bowl.
One medium bowl.
A few cereal bowls.
A few kitchen towels.
Kettle or pot for boiling water.
