    Introduction

    Welcome to my Instant Pot recipes. After feedback from our Instant Pot blog readers we decided to put an ecookbook together of all our favourite recipes. They would be ad free, story free and just be the bare bones of the recipe.

    The cookbook would then be updated once every quarter so that you would always have the most up to date Instant Pot recipes to use in your Instant Pot or other pressure cooker.

    In other words think of it as your easy to print cookbook that is free of ads and so easy to use. Download it to whatever device you like and refer back to it whenever you are thinking about what to cook for dinner.

    We have plenty of lunch and dinner ideas and because we love them so much....plenty of desserts too. So if you want a cheesecake in the Instant Pot, then you’re in the right place.

    I have also had my Instant Pot for just over a year (well at the time of writing this) and love to share with you all our Instant Pot ideas so that you can follow them along at home.

    As a mum of 3 all our recipes suit families of 4-5 and there is always plenty of leftovers for later....

    How To Make Nandos Spicy Rice In The Instant Pot

    Ingredients:

    Instant Pot

    200 Risotto Rice

    3 Tbsp Homemade Nandos Marinade

    3 Garlic Cloves

    ¼ Red Pepper

    Handful Green Peas

    2 Limes juice and rind

    1 Vegetable OXO Cube

    1 Tbsp Olive Oil

    Pinch Saffron

    1 Tbsp Parsley

    1 Tbsp Coriander

    1 Tbsp Thyme

    Salt & Pepper

    Instructions:

    Mix the marinade with the OXO cube and a cup of warm water and place it in the bottom of the Instant Pot with the saffron. Mix it with the rice and place the lid on your Instant Pot.

    Set the Instant Pot to sealing and cook for 10 minutes on the rice setting.

    While the rice is cooking peel and dice your red onion. Peel your garlic cloves and thinly slice the garlic. Dice the red pepper and remove the seeds.

    In a medium sized pan on the hob cook the red pepper, green peas, garlic, red onion with a little olive oil, until it has some colour.

    Add the rind and the juice from the lime and stir well.

    When the Instant Pot beeps manually release pressure and give it a quick mix with a wooden spoon. Add to your Instant Pot rice your cooked ingredients from your pan.

    Stir the ingredients into the rice along with the rest of your seasonings.

    Mix well, taste and if needed add extra salt and pepper before serving.

    Notes:

    This Nandos Spicy Rice is a mild version, if you want it spicier then I suggest you add a teaspoon of PiriPiri spice to your rice just before serving it.

    What happens is that the rice carries on cooking in the Instant Pot when it is left to rest, while you’re mixing in the other ingredients, so the rice really takes 11 minutes to cook, but if you leave it on for 11 it will end up too mushy.

    For a Plan b) You could remove the rice and finish the cooking process in the Instant Pot, but I prefer not to. This is because you can preparing and cooking everything else while the Instant Pot is busy and it means less time in the kitchen.

    Or the Plan C is that you can sauté the pan contents first, add the rice then cook everything in the Instant Pot, but again it adds to the cooking time.

    I use risotto rice as it makes a much better rice dish and is more filling with you needing less rice to feed your family. But you could use a traditional medium grain rice instead.

    Ingredients:

    Whole 30 Book

    Airfryer

    Instant Pot

    300 g Minced Lamb

    3 Large Potatoes

    3 Medium Carrots

    100 g Green Beans

    1 Large Onion peeled and diced

    150 ml Lamb Stock

    1 Tbsp Olive Oil

    1 Tbsp Coconut Oil

    1 Tbsp Rosemary

    1 Tbsp Sage

    Salt & Pepper

    Instructions:

    Place the potatoes (in their skins but diced) into the Instant Pot and cook for 15 minutes on the steam function. Make sure the potatoes are in the steamer basket and that you have added a cup of water to the bottom. Then of course set it to sealing so that it will go to pressure.

    While the potatoes and cooking peel and thinly dice the carrots and the onion.

    Remove the potatoes from the Instant Pot and place them in a mixing bowl that would be of a decent size for mashing your potatoes.

    Save the liquid from the bottom of the Instant Pot and put it to one side for using later.

    Place the carrots and onion in the Instant Pot with a tablespoon of olive oil and cook on the sauté setting for 3 minutes or until the onion has softened.

    Add the lamb and green beans to the mixture, mix well and continue to sauté for 2 more minutes.

    Add the lamb stock, the seasoning and bring to the boil.

    While it is coming to the boil make your mash. Add to the potatoes the coconut oil, 50ml of the potato stock, salt and pepper and a couple of tablespoons of the mince liquid to give it extra flavour.

    Stir a few times and transfer the mixture into the bottom of four ramekins. Use a big spoon with holes in to transfer the meat as then it will stop you having a huge amount of liquid in the bottom of the ramekins.

    Add the mash to the top. Cook the ramekins in the Airfryer for 5 minutes at 200c.

    Serve.

    Notes:

    In a traditional shepherd’s pie you would have frozen peas. But because this is a Whole 30 recipe I have used chopped up green beans instead.

    Instead of gravy granules use some lamb stock instead. We used the juices from some roast lamb and then added a 3Tbsp of coconut milk to it to thicken it up. Along with 1/3 of the stock from the potatoes.

    If the mash is not creamy enough add a couple of tablespoons of coconut milk.

    Instant Pot

    Kitchen Deluxe Steamer

    ½ Kilo King Prawns all shells removed

    2 Limes rind and juice

    1 Tbsp Garlic Cloves peeled and grated

    3 Tbsp Coconut Oil

    1 Tbsp Red Thai Curry Paste

    1 Tbsp Coriander

    1 Tsp Cumin

    Salt & Pepper

    Instructions:

    Place a cup of water in the bottom of your Instant Pot. Place the steamer basket into the Instant Pot.

    In a mixing bowl mix together the lime, garlic, coconut oil and curry paste so that they are well mixed.

    Add everything else to the bowl and make sure the prawns are well tossed in the marinade.
