Who should I be grateful to for my thriving career in diabetes education? It goes way back to getting laid off from NBC Sports in New York City. I was a production assistant for a couple of years in the sports department and there were cutbacks. Several producers were getting laid off and my aspirations of being a television producer were thwarted. I happily accepted my severance package, unemployment check, health insurance and the opportunity to return to school to start a new career.
Although I already had a Bachelor of Arts (BA) in Mass Media and Communications, I received another BA in Home Economics before attending Teachers College at Columbia University for my double Master’s degree in Nutrition and Applied Physiology (an easy four and a half years added to the first four). Therefore, I acknowledge Teachers College and all the exceptional professors who provided me with a stellar education.
Upon graduating, I decided to relocate from New York City to South Florida. I was given an amazingly lucky chance to work as an outpatient dietitian in a multi-location diabetes education center. Usually dietitians begin caring for patients in the hospital. Not only did I have an opportunity to counsel outpatients, I also started out my nutrition career as a specialist in diabetes—a fast-growing field, unfortunately for Americans. Therefore, I thank Mary Bishop for hiring me and JFK Medical Center for employing me for the next 12 years until their diabetes education center closed.
Seven months after starting in this diabetes/nutrition counseling position, I was given the rare opportunity to become the manager of the center due to Mary’s promotion to become an executive administrator of the hospital. I thank Mary Bishop once again for having faith in me.
I admit it was a struggle for awhile. I had just started to feel more comfortable as a counselor and diabetes educator. I had never worked in a hospital before (only in video studios, jingle houses, HBO and NBC-TV) so it was quite a challenge to be in charge of three diabetes centers. Our staff consisted of two nurse educators and me, both an educator and administrator. Here, I must thank Kim Lefebre Singh very deeply. If it wasn’t for her, I never would have been able to succeed at my new position. Kim had been an administrator of different departments in the hospital during her time as a nurse. By virtually taking over the administrative responsibilities, she allowed me to do what I did best: counsel patients, lecture in the community, sit on the board of several diabetes committees, network and gradually work myself into becoming a true manager.
I need to thank both Kim and Bonnie Shepard for being part of an amazing team of diabetes educators and their friendship. We worked together and shared intimate details of our lives for about 12 years. A lot happens in 12 years. These women are priceless.
I have a lot to be grateful for. I have helped people to manage their diabetes and live a healthier existence and so many people have helped me to become a better and more valuable person.
Food Majesty is received
She didn’t always think about her food choices. While she was working on her first four-year college degree she lived on Weaver’s® Frozen Chicken Thighs and Seabrook® Farms Creamed Spinach (remember that!?!) Maybe not, if you’re in a different time era… . but believe me, it didn’t equate to wild salmon and steamed broccoli.
Then something happened. She wanted to lose weight and decided to try, Fit for Life, by Harvey and Marilyn Diamond, and then around the same time, The Jungle, by Upton Sinclair, found her. Harvey and Marilyn kept referring to animal products as flesh.
She kept envisioning eating her own skin. After losing several pounds from their don’t mix food groups
theory, she found herself consuming more tofu than meat, poultry or fish. Upton Sinclair’s rendition of the meat packing industry just about pushed her over the edge and she gave up all animal products FOREVER!
OK, she does admit, with the help of witnesses, it was hard to give up her occasional holiday chopped liver and the mystery meat that snuck into the wonton soup, but nevertheless, with time those cravings withered away. Food Majesty became what is known as a vegan (pronounced veeegan or vagan—but holds the same meaning: a non-animal consuming individual). Alright, it’s true, although she might not have eaten the chicken in the soup, she did consume the soup. She wasn’t the pickiest of vegans. The main idea was not to eat animals—The Jungle convinced her of that. The mistreatment of animals can only continue if people continue to eat them. Yes, the arguments remain that humans are on top of the food chain, etc., however it doesn’t mean that animals should be tortured for our pleasure.
As the years progressed, the veganism became even more meaningful. It was healthier to refrain from eating animals and the products derived from them. She considered what the hormones, poor quality of food the animals would eat (and ultimately us) and the stress that their bodies underwent by being caged, mistreated and killed could do to her body. It was around that time of realization, that Her Majesty began waitressing in a vegetarian restaurant. Surrounded by people who valued their health, she became more and more involved in nutrition and being healthy. Health didn’t only refer to a higher quality cuisine of seaweed, tofu, kale, soba noodles and yogurt dressing, it encompassed an array of actions: exercise, stress-reduction, kindness of self and others, etc. Unfortunately, her body was not in agreement with the lack of animal protein. She did not have the knowledge, creativity or patience to get adequate protein from non-animal sources. Her body felt weak and had symptoms of low blood sugar (dizziness, irritability, etc.) so she eventually decided to incorporate fish, eggs and some dairy products into her food regimen. It made a big difference in how she felt although it did go against her newfound perspective.
Food Majesty returned to college, this time focusing on a degree in nutrition and exercise physiology that lead her to become a dietitian and a specialist in diabetes care.
Introduction
THE DIABETES WORLD—WELCOME TO IT
Memories
. . . that tearjerker Barbara Streisand song… like the corners of my mind
. . . only this time it isn’t about lost love it’s about getting diagnosed with diabetes. Your memories are of the day you walked out of your doctor’s office and thought to yourself, Oh no! I have diabetes.
You vividly remember the long walk out of his/her office and down the corridor. So many thoughts raced through your mind as you started going down the list of people in your family who had or have diabetes—your dad, his dad, your dad’s brother—and you thank them so very much for the honor they’ve bestowed on you. You recall hearing your doctor’s voice, in the background of your somewhat frantic
