Seasoning Your Cast Iron Skillet
Most manufacturers nowadays produce skillets that are already pre-seasoned from the factory. However, you will still come across some that you have to season by yourself. Seasoning is the process of making the surface virtually nonstick. Simply spread a thick layer of kosher salt on the bottom of the cookware. Add about half-inch of vegetable oil then place over high heat. Wait until the cooking oil starts to smoke, then remove from heat and pour it into a bowl. Use paper towels to rub the inside of the skillet until smooth. It is now seasoned.
Caring For Your Cast Iron Skillet
Your main responsibility is to ensure that the seasoning is intact by proper washing, drying then coating with oil.
Do not use soap on the pan, simply scrub with a stiff brush (natural or nylon) and hot water then ensure that you dry it completely. Seasoning can be degraded by detergents.
If you get some sticking and hot spots occasionally, rub the affected area with a little oil and coarse salt.
Dry your skillet completely to prevent rusting. For complete drying, put the clean skillet in on a low burner or warm oven for some minutes.
