Portable PICK-ME-UPS

Gluten-Free Fudge Brownies

PREP + COOK TIME 1 HOUR 15 MINUTES + COOLING MAKES 18

 150g butter, chopped
 300g dark chocolate, coarsely chopped
 1½ cups firmly packed brown sugar
 3 eggs
 ¾ cup ground hazelnuts
 ½ cup buckwheat flour
 ½ cup sour cream
 ¼ cup cocoa powder, sifted

1 Preheat oven to 170°C. Grease a 19cm x 29cm slice pan; line base with baking paper, extending paper 5cm over long sides.

2 Melt butter and chocolate over low heat. Add sugar; cook, stirring, for 2 minutes. Cool mixture for 10 minutes.

3 Stir in eggs, then ground nuts, flour, sour cream and 2 tablespoons cocoa. Spread into pan.

4 Bake brownies for about 45 minutes. Cool in pan before cutting into squares. Dust with remaining cocoa.
