In France, one of the popular foodstuffs to serve is anything that is almond based, making macarons one of the most treasured snacks you can enjoy today. It wasn’t until the early seventeenth century that macarons began appearing in many cookbooks. Macarons, creations of sweet almonds, sugar and egg whites, this is a type of food that has captured the imagination of millions, especially those who share a love of baking.

If you have always wanted to learn how to make macarons for yourself, then you have certainly come to the right place. Inside of this cookbook, you will not only learn how to make authentic French macarons completely from scratch, but you will have access to over 25 of the most delicious macaron recipes you will ever find.

Birthday Cake Macarons

To kick things off, we have a delicious macaron recipe that you can make in time for someone’s birthday. Frosting spread in between, this is a sweet treat I know you will love.

Makes: 20 to 25 servings

Total Prep Time: 1 hour

Ingredients for the macaron shells:

1 cup + 2 Tbsp. of almond flour

3 egg whites

½ cup of white sugar

1 ½ cups of powdered sugar

2 to 3 drops of pink food coloring

Rainbow sprinkles, for topping

Ingredients for the filling:

½ cup of butter, soft

1 ¾ cup of powdered sugar

½ tsp. of whole milk

¾ tsp. of pure vanilla

2 Tbsp. of rainbow sprinkles

Directions:

1. Preheat the oven to 325 degrees.

2. Place a ¼ inch round tip onto a piping bag. Line a baking sheet with a sheet of parchment paper.

3. Prepare the macaron shells. In a bowl, add the almond flour and powdered sugar. Stir well until evenly mixed.

4. In a stand mixer, add in the egg whites. Beat with on the medium setting until peaks form on the surface. Add in the white sugar and continue to beat until the peaks become stiff. Add in the almond flour mix and stir well until evenly incorporated.

5. Pour 1/3 of the mix into the piping bag. Set the remaining batter aside.

6. Pipe 1 ½ inch circles of the batter onto the baking sheet. Sprinkle the rainbow sprinkles over the top.

7. Set aside to rest for 35 to 45 minutes.

8. Place into the oven to bake for about 10-12 minutes or until set. Remove
