Arctic fox sandwich cookies
Often when you cut out the centres for cookies, there isn’t much use for them… but this recipe uses the centre cut-out to create the ears and tail for these tasty-yet-adorable arctic fox cookies! The only issue is that you will probably be tempted to eat the centre cut-outs, but you will have to try to resist!
MAKES 12
For the orange blossom ganache
160ml (5½fl oz) double cream
1¼ tbsp cornflour
70g (2½oz) caster or granulated sugar
3½ tbsp orange blossom water
100g (3½oz) white chocolate, chopped into small pieces
100g (3½oz) butter, cubed
white food dye (optional, but this helps the ganache to look whiter in colour)
For the shortbread
200g (7oz) salted butter, softened at room temperature
85g (3oz) caster or granulated sugar
white food dye
220g (8oz) plain flour, plus extra for dusting
50g (1¾oz) cornflour
To decorate
½ quantity of royal icing (recipe on page 49)black food dyeicing sugar, for dustinggreen, red, blue
