After several tests and procedures I was diagnosed with IBS in 2006 after suffering with stomach upsets for many years. The Doctors weren’t particularly helpful, telling me to try a Wheat Free diet and just sent me on my way. I had always had an issue with cow’s milk so I went off dairy and wheat but this still didn’t help. All that happened was my symptoms got worse. I finally found some relief when I went to see a Doctor who specialized in Applied Kinesiology and Allergy testing. With his help over several months I was able to find what foods triggered my IBS symptoms, the list was long.
It would be safe to say I had a real bread fetish. I loved visiting the bakeries and buying my favourite, Custard Tarts. So at first it was rather daunting. Most of the foods I ate regularly were upsetting my stomach. What was I going to eat? I was given a few recipes using grain free flours. The next day I did a whole heap of cooking; only to find the recipes weren’t that nice, the food was dry and lacked flavour. I know firsthand how difficult it is to find food and recipes that taste delicious as well as being safe for me to eat without upsetting my stomach.
After much experimenting, trial and error I came up with some recipes that taste yummy and don’t make me feel like I’m missing out or being deprived. In fact there have been many times when the rest of the family would prefer to be eating what I’m eating. For main meals they do but hey I get to have my treats too. Some old favourites like custard tarts and chocolate aren’t included I’m afraid, but yes there is life after chocolate and yes even custard tarts.
I’ve had to go back to the old way of cooking. The way people used to cook, using herbs and spices and not pre-packaged food. No more Maltodextrin, Dextrose, Corn Syrup, Flavour Enhancer or half the other names you can’t say on
