    Introduction

Thank you for purchasing this book, first of all I would like to tell you a little bit about myself. My name is Jason Smith and I am a qualified baker and professional patisserie or pastry chef, I am also a qualified chef and the reason I wrote this book is simple really, throughout my catering career as a chef I realised not all chef could bake they were very good at the cooking side of things but when it came to desserts or any kind of baking it was always a disaster.

I am no exception to that rule as well no matter what I tried it was doomed to fail now I can see why I don’t want to go into to much technical stuff in this book there’s no need for all that I want to make this book simple to understand where problems can arise and the correct procedure to put them right.

This book has been designed for anyone who is interested in learning how to bake as a career or for those who love to bake at home for their friends and family. In this book my main aim is to cover all the most common mistakes made that will cause your baking to become a disaster and by avoiding these you too can become a great baker and impress all your friends and love ones once again thank you for purchasing this book and I wish you
