Lost Recovery mode with old firmware

I’ve been unable to update the firmware in my iMac Retina 5K 27-inch Late 2015 (iMac17,1) beyond version 170.0.0.0.0, but experienced no problems until upgrading it to Big Sur. Now Recovery mode won’t work properly, as it keeps offering me El Capitan over the internet, even with Command;+R. Can you explain how I go about fixing this?
