Lemon polenta cookies
Biscotti limone e polenta
➤ MAKES about 24 ➤ PREPARATION 40 mins ➤ BAKING 10 mins
• 250g plain flour
• 125g fine polenta cornmeal
• 125g caster sugar
• grated zest of 1 large, unwaxed lemon
• 250g salted butter, softened
1 Put the dry ingredients and lemon zest into a large mixing bowl and give them a good stir to mix in the lemon zest thoroughly and evenly. Add the butter and use your hands to work the mixture into a smooth dough. This shouldn’t be too much of a task if the butter was properly softened beforehand.
