Lemon polenta cookies

Biscotti limone e polenta

MAKES about 24PREPARATION 40 minsBAKING 10 mins

250g plain flour
125g fine polenta cornmeal
125g caster sugar
grated zest of 1 large, unwaxed lemon
250g salted butter, softened

1 Put the dry ingredients and lemon zest into a large mixing bowl and give them a good stir to mix in the lemon zest thoroughly and evenly. Add the butter and use your hands to work the mixture into a smooth dough. This shouldn’t be too much of a task if the butter was properly softened beforehand.
