Roasted Eggplant

Ingredients Eggplant (any size) Olive Oil Celtic Salt Finely chopped Onions (size according to taste & size of eggplants) Directions Roast eggplant over open fire till it is mostly cooked. Cool and peel all burned skin off. Chop eggplant into small pieces. Finely mince the onion. Place eggplant into bowl, add onion, olive oil and salt. Mix well.
