Chocolate Mousse

Ingredients - 200g unsweetened or semi sweet chocolate for cooking - 1 cup to 11/4 cups whipping cream, kept very chilled - 3 eggs - 6 tbl icing sugar for unsweetened chocolate - 2 tbl icing sugar for semi sweet chocolate - 2 tbl Crme de Cacao or Tia Maria (coffee liqueur) - 1.5 tsp vanilla essence Method 1. Melt the chocolate in a double boiler and let it cool down till it is warm. 2. While the chocolate is cooling, separate 2 eggs into whites and yolks. Mix the yolks with the remaining whole egg. 3. Beat the 2 egg whites in a mixing bowl with an electric beater till soft peaks form. Sprinkle the icing sugar over the top and beat till the mixture forms firm peaks. 4. There is no need to wash the beaters. Use another bowl and beat the egg yolk and egg white mixture till it is lemon coloured and soft peaks form. 5. Wash the beaters and dry very well. Whip the chilled cream till it forms medium stiff peaks. 6. Add the cooled chocolate and a scoop of whipped cream to the beaten egg yolk mixture. The mixture will be very firm. Stir until smooth and then add the Crme de Cacao or Tia Maria and the vanilla essence. 7. Add the remaining cream to the mixture and fold in till smooth and creamy. 8. Finally add the egg whites and fold till just blended. Chill at least 4 hours before serving. 9. You can decorate with strawberries and chocolate rice.
