FLUFFY ORANGE CAKE

Ingredients

1 cup (250g) butter/ margarine 1 cups sugar 4 to 5 large eggs 1 teaspoon vanilla essence Juice of one orange Grated peel of one orange 2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda teaspoon salt 1 cup butter milk additional milk can be added if required.

Method Preheat oven at 1800C. In a large mixing bowl, beat the butter until creamy. Add the sugar, eggs, vanilla essence, grated orange peel and orange juice to the butter and mix well. In a separate bowl, sift together the flour, baking powder, baking soda and salt. Add spoonfuls of the flour mixture to the butter mixture, alternating with the buttermilk and mix well after each addition. Add milk if the batter is too thick. The batter should be easy to pour. Once all the ingredients have been combined, pour into one large cake tin or 2 smaller tins. Bake at 1800C for about 60 minutes or until done. Once done, remove from oven and allow to cool for 15 minutes before removing the cake from the cake tin.
