Katie Durnwald FN 1010-Intro to Dietetics Carrie Hamady 12/13/13 Dietitian Interview Writing Assignment My FN 1010 class was assigned

to interview a dietitian of our choice to present to the class, and given to us so we can use it for our own learning benefit. I chose to interview Daria Dreyer, who is a food service dietitian. Daria received her undergrad at BGSU and continued her career here. She then received her MBA from the benefit package from working for the University. She is a RD, LD, and in food service management. Daria works for BGSU Dining and does many different jobs every day of work. A Dietitian is an expert on food and nutrition and is required to complete a credentialed program, supervised internship, pass the national exam, and continue education throughout the career to receive and maintain the RD title. (1). There are three different paths of dietetics in which you can specialize in, and food service is one of them. Food service dietitians mainly work in cafeterias, correction facilities, and university dining halls. According to The American Dietetic Association, registered dietitians and credentialed staff are responsible for keeping a nutritious, quality lunch for schools, while keeping it affordable. There are guidelines that schools and institutions have to follow when providing lunches for students. These policies assure that the food will maintain a healthy environment and nutrition integrity. (2). Daria specializes in food service management for BGSU Dining. Her job is different every day and she has many responsibilities. It is very noticeable that BGSU Dining offers healthy options such as the Fresh Market area in the dining halls. This area provides three

different blends of salad, three types of fruits, yogurts, and a variety of toppings. The food service management strives to increase the servings of fruits and vegetables for food options. (3). The food sources on campus do not contain strictly all healthy foods because some people simply choose not to eat healthy, but there are many healthy options available. Many people enjoy making healthy choices and many people do not, so there are options provided for every type of person to be satisfied. According to todays Dietitian, college campuses have been improving their service as time goes on. They are listening to the students demands and providing foods for students with food allergies. (4). Every day Daria meets up with the managers and staff to address any issues or a concern that includes BGSU Dining so that they can team up and fix the situation. Daria stated that every day differs in jobs and responsibilities she has to pursue. She addressed that some months have special nutrition promotions that are focused on, she may have to consult with students with food allergies or intolerances to guide them on eating properly, and making sure the system is running in a smooth matter throughout every day. Darias career as a food service manager is a very complex job and requires different responsibilities. She is in charge of meeting co-workers to assure that everything is running smoothly and making sure the food meets the requirements and policies. It is very important for a food service manager to keep the consumers happy by providing variety, quantity and nutrition. Overall, Darias position is a very important part of BGSU Dining to make sure the University is provided with foods that suit every type of person and lifestyle.
