Roasted Butternut Squash and Apple Soup

The creaminess of this makes you never believe its legal. !ombined "ith the tingle of toasted curry# ginger and cayenne makes this truly an e$citing company "orthy soup. %ake it over and over to truly celebrate fall and "inter. &reheat oven to '(( degrees. Thoroughly spray t"o baking sheets "ith nonstick olive oil spray.
1 butternut squash, cut in half lengthwise, seeds removed or 3 cups cubed. 1 large apple (Granny Smith, Jonathan, Macintosh sliced in half and cored. 1 onion peeled and sliced into 3 or ! thic" slices of #rings$. 3 large garlic cloves, left whole, s"ins on 1 ' curry powder 1' of fresh grated gingerroot + cups of chic"en or vegetable stoc", divided %lace the butternut s&uash cut side down and same with the cored apple. %ut the slices of onion flat side down, with the rings still intact. 'oss the 3 garlic cloves, left whole, onto the roasting pan. Sprit( with additional olive oil. )oast in oven 3* minutes. Meanwhile, lightly toast the curry powder in a dry pan over medium heat until it begins to give off a nutty fragrance. Set aside. ,nce the butternut s&uash is golden and tender to the touch, remove and allow to cool. )emove the s&uash s"in and transfer all of the remaining to a blender or food processor. (May have to wor" in batches . -se . cup or so of the broth to degla(e the pan, being certain to remove all #brown bits$ (thin" flavor that may have formed on the pan and add to the blender. /dd 101 cups of stoc", and the gingerroot and toasted curry and puree on high. 'ransfer to large stoc" pan along with the remaining broth. /dd to the soup pot and coo" until slightly thic"ened, stirring fre&uently. 3ower heat and simmer for 1* minutes. Stir in until heated through and cheese thoroughly melts. Serve hot and garnish with chopped parsley or chives if desired.
