RESEARCH RECIPES: PASTA

The recipes that I am designing for my website is pasta. Pasta is a very easy recipe to make and only takes a short period of time to cook. There are many different types of pasta that can be cooked such as macaroni, spiral, angel hair and many more.

SERVES: 4 PREPARATION TIME: 8 minutes COOKING TIME: 15 minutes

INGREDIENTS: 1 tablespoon of olive oils 1 brown onion, chopped 2 garlic cloves, crushed 2 tomatoes, diced 1 tablespoon of tomato paste 1/3 continental parsley teaspoon of caster sugar 400g fresh dried pasta

METHOD:

1. Step 1: Heat the oil in a large frying pan over medium heat. Add the onion and cook, uncovered, stirring often, for 3 minutes or until it softens slightly. Add the garlic and cook, stirring, for 1 minute or until aromatic. 2. Step 2 Stir in the tomatoes and tomato paste. Increase heat to high and bring to the boil. Reduce heat to medium and simmer, uncovered, stirring often, for 6-7 minutes or until the sauce reduces and thickens slightly. 3. Step 3 Stir in the parsley and sugar. Taste and season with salt and pepper. 4. Step 4 Meanwhile, cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain and return to the pan. 5. Step 5 Add the sauce to the pasta and toss to combine. Serve immediately.

INGREDIENTS: 2 tablespoons of Extra Virgin Olive Oil 1 medium onion, chopped 3 garlic cloves, chopped 4 tomatoes, skinned and seeds removed 1 tablespoon of tomato puree Salt and Pepper, ground Pinch of sugar, optional 1 Bay Leaf 1 Sprig of Thyme

method
1. Heat the oil in a wide frying pan over a gentle heat. 2. Add the onions and fry gently, stirring frequently, until translucent. They should be softened and not browned. Don't rush this stage - it should take about 8-10 minutes.

3. Add the garlic and cook for a further minute or so to soften. 4. Tip in the fresh or tinned tomatoes and the tomato puree and stir. 5. Add salt and freshly ground black pepper, sugar (if using), the bay leaf and thyme. 6. Bring up to the boil, then reduce the heat and simmer very gently for 20-30 minutes, stirring frequently, until the tomatoes have reduced down to a thick sauce. You may need to add a little water to prevent it from catching. 7. When the sauce has been simmering for 10-20 minutes, bring a large pot of well-salted water to the boil and cook your pasta according to the packet instructions. 8. When the pasta is cooked, drain. 9. When the sauce is cooked, taste for seasoning and add salt and freshly ground black pepper if necessary. (At this stage, the sauce can be cooled and then frozen in containers for several months.) 10.When you're ready to serve it, tear the mozzarella into chunks and add to the sauce. Tear the basil leaves and add to the sauce, then turn off the heat from under the sauce. 11.Remove the bay leaf and thyme. 12.Pour the sauce over the pasta and serve.

Makes: 350 mL

INGREDIENTS: 1 tablespoon of Olive Oil 1 Garlic Clove, crushed 400g of Chopped Tomatoes 1 teaspoon of Vegetable Stock Powder 1 tablespoon Tomato Puree 1 teaspoon Sugar A few Basil Leaves

METHOD:
1. Heat the oil in a pan, add the garlic, then gently fry for 1 minute. 2. Tip in all the other ingredients, except the basil, then bring to the boil. 3. Reduce the heat, then simmer uncovered for 5 minutes, stirring occasionally.

4. To finish, tear the basil leaves, then stir into the sauce.

INGREDIENTS: 1 tablespoon of Olive Oil 1 clove of Garlic Crushed 1 Onion, sliced 1 tablespoon of Tomato Paste 2x 400g cans chopped peeled tomatoes Salt and Ground Black Pepper 1 teaspoon of Sugar cup of chopped Basil 1/3 cup chopped flat leaf parsley

METHOD:

STEP 1- Heat the oil in a large saucepan over medium heat. Add the garlic and onion and cook for 3-4 minutes until softened but not browned.

STEP 2- Add the tomato paste and cook, stirring constantly for 1 minute (this 'cooks off' the paste, giving it a richer more intense flavour).

STEP3- Add the peeled tomatoes, reduce the heat and simmer for 8-10 minutes, until thickened.

STEP 4- Stir through the salt and pepper, sugar, basil and parsley, adjusting the seasoning as required.
