UBC Ponderosa Cake

This is a delicious moist, chocolate


chip banana cake. Makes one
8" square cake.
60 ml butter, softened
100 ml granulated white sugar
1 egg
2 ml vanilla
180 ml mashed bananas (approx. 1-1.5 bananas)
190 ml flour
2.5 ml baking powder
2.5 ml baking soda
60 ml sour cream or plain yogurt
For topping
2.5 ml cinnamon
30 ml brown sugar
90 ml chocolate chips
Mash the bananas using a fork. Cream butter and granulated
sugar using an electric mixer. Add egg, then vanilla and bananas.
Combine flour, baking powder and baking soda. Add dry
ingredients to banana mixture alternately with sour cream. Pour
half of batter into greased 8" square pan. Mix cinnamon and
brown sugar together. Sprinkle half on top of batter, then half of
chocolate chips. Repeat layers. Bake at 400 degrees F for 30-40
minutes or until cake tester in middle comes out clean.
