ENCHILADAS

Enchiladas picosas, calientes, y deliciosas. This is one of Mexico's favorite plates for visitors
from different places. Lourdes, the woman who can make the most delicious enchiladas, is my
mom. I was born in Reno Nevada, but was raised mostly in Mexico. I learned the Mexican
culture by my grandpa. He taught me the way Mexicans do their normal day on the fields. He
taught me how to do enchiladas from the very beginning. He used to say, Para comer necesitas
llevar la gorda a la mesa. First, we use to get sharp knives that were to cut la caya. Next we use
to let them on the sun until they dry out. When that was done my grandpa, brother and I will go
to the farm to desgranar. That was when you took all of the seeds off of the corn off and at the
end we just took them to my grandma.

With the hard work that the man does the woman than will be able to make the food. Thats
what my grandpa used to say after we went home from the farm. My grandma cooked the chile
rojo before everyone woke up, than she would start smashing the maiz until it became a masa.
Lastly she would make the tortilla and the cheese. My favorite part was when she called me to
help her with the onion. I would help her cut it and put it on the enchiladas. When I was all done
me and my grandpa used to sit on the front of the table and eat together. Than all the time before
eating he said, El hombre que trabaja merece comer con el sudor de su frente se lo gan. Until
the day of today I still remember that because he used to say it all the time before eating. My
mom told me that my grandma taught her the basics skills of making enchiladas.

El chile es el que le da sabor a la comida. My mom used to say when she was in Mexico.
Now that shes in the United States, she says that el Mexicano is the one who brought a lot of
culture to the U.S.A. She says that she feels like she was in Mexico by the way there's a lot of
Mexican stores in every corner. She says that she does not struggle a lot like she did in Mexico.
Now she just buys the tortillas made in the store and also the chile. During the summer vacations
I always make enchiladas by myself because she taught me how to make them, Tostas la tortilla
en aceite, luego cortas la cebolla en pedazos chicos, despus calientas el chile rojo, mojas la
tortilla en el chile le echas el queso en medio de la tortilla enrollars la tortilla y le echas la cebolla
encima y al final provecho.
