BBQ PORK CHOPS
- 4 Pork Chops per bag
- BBQ sauce until well covered
- Add cup water when ready to cook
- Freeze flat
- Cook on low for 6-8 hrs

SWEET & SOUR PORK CHOPS
- 4 Pork Chops per bag
Sauce:
- 1 cup brown sugar
- 2 Tbsp Flour
- cup vinegar
- cup water
- cup ketchup
- 1 Tbsp Soy Sauce
o Mix and bring to boil
- Cook on low for 6 8 hrs

- 1 pork roast
- 1 package onion soup mix
- 1 bottle Babys Rays
- Cook on low for 8 hrs

BBQ PULLED CHICKEN
- 4 Chicken Breasts
- 1 bottle Baby Rays
- cup red onion
- Add cup water when ready to cook
o Can be used for pulled chicken on a bun (toasted with cheese)
o Can be used for pulled chicken tacos (pulled chicken + bell peppers + cheese wrapped
in tortilla and baked with cheese or warmed in a frying pan)

CHICKEN TACO CHILI
Ingredients:

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24 oz (3-4) boneless skinless chicken breasts
chili peppers, chopped (optional)
1/4 cup chopped fresh cilantro
Directions:

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in
a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half
hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with
fresh cilantro. Also try it with low fat cheese and sour cream

MARINATED CHICKEN
Marinade:
- 4 Chicken Breasts or 2 lbs chicken parts
- 1/4 cup white wine (not cooking wine)
- 1/3 cup extra virgin olive oil
- juice of one lemon
- 1 Tbsp. dried oregano
- 3/4 tsp. Salt
- 2-3 big garlic cloves, minced
- 1/2 tsp. freshly cracked black pepper (he didn't call for this but I believe it to be essential)
- Mix all ingredients and freeze flat
- Cook on low for 6 8 hrs

CHICKEN NOODLE SOUP
Ingredients
Original recipe makes 6 servings
1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
1/2 pound chopped cooked chicken breast
1 1/2 cups egg noodles
1 cup sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste

Directions
In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5
minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano,
salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

CHILI
Ingredients


1 1/2 pounds lean ground beef $


1 onion, chopped $


1 small green bell pepper, chopped $


2 garlic cloves, minced


2 (16-ounce) cans red kidney beans, rinsed and drained


2 (14-1/2-ounce) cans diced tomatoes $


2 to 3 tablespoons chili powder


1 teaspoon salt


1 teaspoon pepper


1 teaspoon ground cumin
Preparation
1. Cook first 4 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no
longer pink; drain. Place mixture in 5-quart slow cooker; stir in beans and remaining ingredients.
Cook at HIGH 3 to 4 hours or at LOW 5 to 6 hours.
2. Notes: If you want to thicken this saucy chili, stir in finely crushed saltine crackers until the desired
thickness is achieved.

MEATBALLS
1 lb ground beef
pound ground pork
cup milk
1 egg beaten
1 cup cracker crumbs
1 chopped onion
Salt and pepper
- Mix together and form balls
- Brown on cookie sheet
Sauce:
- 1 cup ketchup
- 3 Tbsp Brown Sugar
- 4 Tbsp Vinegar
- cup water
- 4 Tbsp Worchestershire
o Bring to a boil and pour over meatballs
Add meatballs and sauce to bag. Freeze flat. Cook for 6 8 hrs on low or bake in oven at 300 for 1
2 hrs.

OATMEAL BANANA MUFFINS
3 mashed bananas (the more ripe the better!)
1 cup vanilla Almond milk (any milk should work)
2 eggs
1 tbsp Baking powder
3 cups (240g) Old Fashion or Rolled Oats
1 tsp vanilla extract
3 tbsp (42g) mini chocolate chips
Preheat oven to 375 degrees
Mix all ingredients except the choc. chips together, and let sit while you prepare the muffin pans.
Spray a muffin pan and/or liners with with non-stick spray.
Stir the chocolate chips into the oatmeal batter.
Divide batter into 15 muffin cups. They should be just about filled.
Bake 20-30 minutes, youll see the edges just starting to brown and they will be firm to the touch.
The muffins may stick when hot but are removed easily when cooled for a bit.

BLUEBERRY MUFFINS
Ingredients
2 Tablespoons butter
1 egg
cup plain yogurt (whole milk or 2%)
1 teaspoon vanilla extract
cup white whole wheat flour
cup rolled oats
cup sugar
teaspoon baking powder
teaspoon baking soda
1 teaspoon cinnamon
cup fresh blueberries
Sugar for sprinkling (optional)
Instructions
1. Preheat oven to 350 degrees F.
2. Melt butter in microwave.
3. Stir in egg, yogurt and vanilla until well combined.
4. Add flour, oats, sugar, baking powder, baking soda and cinnamon and stir until just combined.
5. Gently mix in berries, reserving a tablespoon or two.
6. Scoop in greased or lined muffin tins. Fill the tins most of the way full- you should get 7-8
muffins.
7. Press a few berries into the top of each muffin and sprinkle lightly with sugar if desired.
8. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

HOMEMADE GRANOLA

Ingredients
3 cups old-fashioned oats
cup nuts and/or seeds (we used roasted sunflower kernels, chopped walnuts and sliced almonds)
cup ground flaxseed meal
cup unsweetened applesauce
1 tablespoon honey
1 tablespoon canola oil
2 teaspoons cinnamon
teaspoon salt
cup coconut
cup dried cranberries or other dried fruit of choice (optional)
Preparation
1. Preheat oven to 275 F.
2. In a medium bowl, combine the oats with the mixed nuts and/or seeds and the ground flax.
3. In a small, microwave-safe bowl, combine the applesauce, honey, canola oil, cinnamon and salt.
Microwave on 100% power for 1 minute, stirring after 30 seconds, just so that it is warm and a
little thinner.
4. Pour warm applesauce mixture over oat mixture and stir to combine. Add coconut and stir
again to mix through.
5. Spread granola mixture on parchment-lined baking sheet.
6. Bake for 1 hour, stirring every 10 15 minutes.
7. Remove from oven and allow to cool completely. Stir in dried fruit, if desired.
8. Store in an airtight container for several days.

GRANOLA BARS
- 1 cup brown sugar
- 2/3 cup peanut butter
- cup corn syrup
- cup margarine
- 2 tsp vanilla
- 3 cups oatmeal
- cup coconut, sunflower seeds
- 2 Tbsp sesame seeds
- 1 cup choc chips
Press into 9 X 13 pan
Bake 15-20 min @350

BANANA BREAD
Ingredients
3 ripe bananas, mashed
1/2 cup (125 mL) buttermilk
1-1/2 tsp (7 mL) baking soda
2-1/4 cups (550 mL) all-purpose flour
1-1/2 tsp (7 mL) baking powder
1/4 tsp (1 mL) salt
3/4 cup (175 mL) unsalted butter, softened
1 cup (250 mL) packed brown sugar
1 egg
1 tsp (5 mL) vanilla
Preparation
In bowl, stir together bananas, buttermilk and baking soda. Let stand for 5 minutes.

Meanwhile, whisk together flour, baking powder and salt; set aside.

In large bowl, beat butter with brown sugar until combined. Beat in egg, vanilla and banana mixture.
Stir in flour mixture until combined; scrape into greased 9- x 5-inch (2 L) loaf pan.

Bake in 350F (180C) oven until cake tester inserted in centre comes out clean, 60 to 70 minutes.
Let cool in pan on rack for 15 minutes. Turn out onto rack; let cool completely.

PUFF WHEAT CAKE
- 1/3 cup butter
- 1 cup brown sugar
- 1 tsp vanilla
- cup corn syrup
- 2 Tbsp Cocoa
- 8 cups puffwheat cake
o Boil all ingredients and stir in with puff wheat
o Press into 9 X 12 pan

CHOCOLATE CHIP ZUCCHINI MUFFINS
Ingredients
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
Directions: In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil,
milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini,
chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 for
20-25 minutes or until muffins test done. Yield: about 1 dozen.

RICE KRISPIES
INGREDIENTS:
1/4 cup butter
4 cups miniature marshmallows
5 cups crisp rice cereal
DIRECTIONS:
1. Melt margarine in large sauce pan over low heat. Add marshmallows and stir until melted and
well-blended. Cook 2 minutes longer, stirring constantly. Remove from heat.
2. Add cereal. Stir until well coated.
3. Using buttered spatula or waxed paper, press mixture evenly and firmly in buttered 13 x 9 inch
pan. Cut into 2 x 2 inch squares when cool.
