Serves 6 Ingredients Olive oil cooking spray 1 large onion, peeled and chopped 2 cloves garlic, finely chopped 1 tbsp water 2 zucchini, grated 200g sweet potato, peeled and grated 1 slice or 50g lean bacon trimmed of visible fat, finely diced 1 cup grated reduced fat tasty cheese * 1 cups wholemeal self raising flour 7 eggs* * Products available with the Heart Foundation Tick. Remember all fruit and vegetables automatically qualify for the Tick. 1. Preheat oven to 180C and spray a large baking dish with olive oil 2. Place onion and garlic into a saucepan with a tablespoon of water and cook for 1-2 minutes, or until softened 3. Place onion and garlic mixture into a large mixing bowl and add remaining ingredients until well combined 4. Pour into baking dish and bake for 60-70 minutes 5. Stand in dish for five minutes and slice into 6-8 squares 6.
